Born in Colmar and raised in northeast France, David Werly has represented an array of prestigious restaurants and hotels over three continents. He is a man of high personal standard and brings a wealth of inspiration and energy to his team.
Werly currently serves as Executive Chef for the triple Forbes Five Star Mandarin Oriental, Las Vegas where he is responsible for the daily operation of all culinary offerings including the acclaimed Twist by Pierre Gagnaire, MOzen Bistro, Tea Lounge, Mandarin Bar, Pool Café, In-room Dining, as well as the property’s banquets and customized event catering. His experience and knowledge is the perfect match for the Mandarin Oriental Hotel Group with regards to providing a Five-Diamond, Five-Star experience for each guest.
It is during his childhood that Werly begin his culinary journey while making apple tart for his family. After a rigorous four year training at the École hôtelière de Strasbourg, he left for Paris where he spent his first year at Relais & Châteaux, Le Pré-Catelan from Gaston Lenôtre. While in the military, Werly served as a private chef for the Minister of Industry in Paris, before joining the legendary Ritz Hotel. Werly’s other culinary accomplishments include: opening Le Cirque in Mexico, re-opening a new Le Cirque in New York, taking the helm of Le Cirque at Bellagio Hotel Las Vegas where he was awarded a Michelin Star and Five-Diamond AAA recognition and joining Setai Hotel in Miami where he earned the venue global recognition when it was named One of the Top Ten Hotel Restaurants of the World” by Hotels magazine.
Having accumulated such a wealth of experience, Werly continues to look for new challenges where he may be inspired to add his creative touches without compromising on the refined details that matter most.
