Chef Marcus O’Brien currently holds the position of Executive Chef at Hard Rock Hotel & Casino where he oversees the menu development and kitchen staff at the property’s diverse array of restaurants including hip Mexican cantina Pink Taco, Las Vegas diner staple Mr. Lucky’s and the upscale dining destination 35 Steaks + Martinis; as well as the resort’s in-room dining program. In his role, O’Brien also leads the catering and special events departments in developing unique menus for many of the property’s large-scale events and sales clients.
Originally from St. Charles, Ill., located west of Chicago, O’Brien was brought to Las Vegas by the N9NE Group, which owned and operated many of the food and beverage outlets at the Palms Hotel & Casino. As Executive Banquet Chef for N9ne Group, he managed daily restaurant and banquet operations of seven outlets which included N9NE Steakhouse, Ghostbar, Rain Nightclub, Moon Nightclub, Playboy Club, Nove Italiano and the Palms Pool & Bungalows.
Throughout his career, O’Brien developed various catering concepts for exclusive celebrity events such as the MTV Music Awards, dinners with government officials and has served as a personal chef for many private celebrity parties. He has also worked under James Beard nominated chef, Michael Kornick, Barry Dakake of the N9NE Group and Brian Massie of the Light Group.
O’Brien has over 13 years of progressive culinary experience executing in world class resorts, upscale restaurants, sporting venues, as well as catering many of the largest and most high profile events. With his love of the food and beverage industry, O’Brien has dedicated himself to being at the top of his trade as well as bringing out the best of those around him in his field.
