Chef Wes Kendrick's Cheesy Chicken Broccoli Bake

Chef Wes Kendrick of Table 34 shares with us his Cheesy Chicken Broccoli Bake recipe that's quick and easy to make. This all-in-one dish can be prepared using shelf-stable ingredients and fresh or frozen vegetables.

Ingredients List:

2 - 12.5oz Cans of Swanson White Chunk Chicken Breasts

1 – 10.5oz can Campbell's Cream of Broccoli Soup

1 – 10.5oz can Campbell's Cream of Chicken Soup

1 – 8oz can Sliced Water Chestnuts

¼ cup Chopped Carrots (1/4 inch diced)

½ Cup Whole Milk

2 Cups Chopped Broccoli (fresh or thawed and drained frozen)

1 Box 6oz Stovetop Chicken Stuffing Mix

1 8oz Bag Shredded Mozzarella/Cheddar Blend Cheese (Divided into 2)

9x13 Casserole Dish

Method of preparation:

Preheat Oven to 375 degrees

Blanch Broccoli and Carrots for 2 minutes in boiling water, drain and rinse in cold running water

Cook Stuffing as directed on the box

Drain Water Chestnuts and dice into ¼ inch pieces

In Large Mixing bowl, combine and mix:

Chicken Soup, Broccoli Soup, Chicken, Carrots, Broccoli, Water Chestnuts , ½ cup milk, ½ of Cheese

Scoop mixture into greased casserole dish

Spoon stuffing on top

Place in center of oven and cook for 20 minutes

Remove from Oven and top with remaining Cheese

Bake for an additional 25 minutes, total cook time 45 minutes
