Q&A with Chef Robert Irvine

Tropicana Las Vegas will be hosting the "Summer Cookout" to kick off Las Vegas Restaurant Week. Guests are invited to enjoy the ultimate dine-around experience with Chef Robert Irvine, and proceeds from the evening will support Three Square in the fight against hunger in Southern Nevada. To prepare for the event, we asked Chef Robert Irvine what guests can anticipate.

Your restaurant has almost been open for a year! Could you please tell us how it's going and share your thoughts about the Las Vegas community?

It's been an incredible ride! From the moment I first stepped foot in Las Vegas, I knew I wanted to be a part of this community. Las Vegas is such a special place – the community is so strong, supportive and unlike anywhere I've ever been. I'm lucky to have received such a warm welcome! I can't wait to share what's in store for year two.

For our readers who are unfamiliar with the Summer Cookout, could you please explain to them what the event is about?

The Summer Cookout is the ultimate way to kick-off Las Vegas Restaurant Week! The Summer Cookout is a dining experience unlike any other – this year, guests will experience a summer affair-inspired evening complete with summertime favorite dishes and cocktails, games and more, all while supporting Three Square's mission to end hunger in Southern Nevada.

How does this year's Summer Cookout differ from last year's?

This year, we're bringing The Strip inside Public House and with me at the helm, you know we're taking it to the next level! We've rallied our neighbors and guests can expect even more delicious dishes, creative cocktails, exciting games and so much more. I can't give it all away – you'll have to see it to believe it.

What are some of the items on the menu that you're excited for guests to try?

  • Blackened Mahi Sliders with achiote aioli, cabbage slaw and watercress
  • Spiced Lamb & Potato Croquettes paired with tzatziki dipping sauce
  • Chef's Choice Pizza
  • Mini Asian Chicken Salad on crispy wontons

You are a big supporter in Three Square's mission. Could you please tells us your reasons for supporting the fight to end hunger?

Since I was introduced to Three Square, I've been incredibly impressed with the team's dedication to raising funds and sourcing food to directly service the Las Vegas community. I know Three Square relies heavily on volunteers, and I was excited to learn how I could help. As a chef, I feel especially connected to the fight to end hunger, and I'm always willing to support those in need where I can. Food is a labor of love both inside the kitchen and out.

What does a hunger-free community look like to you?

To me, a hunger-free community is a community that acknowledges where food insecurities might exist, and all members of the community band together to combat those insecurities fast. Hunger-free communities are supportive, educational and work as a team to ensure that no one is ever left hungry.
