Joshua Mcintosh

General Manager
Momofuku Las Vegas

Joshua Mcintosh brings more than 20 years of experience in food and beverage, as well as hospitality, to the Las Vegas market. He caught the bug in the late 90s, working for various restaurants in Southern California.

Mcintosh’s life would change forever when he met his future wife in San Francisco, California, who helped him acquire a true passion for food and beverage. He would then take on opening Momofuku’s first West Coast restaurant in 2017, inside The Cosmopolitan of Las Vegas.

Mcintosh joined the team as a bartender and became their General Manager. After stepping down to launch Milkfish Bakeshop with his wife, Kimmie, they would spend their time organizing charity bake sales to raise awareness for social injustice.

They had the honor of incubating their concept downtown at the Vegas Test Kitchen. This opportunity led to several pop-ups around the city, a few amazing events, like Asian Night Market, and eventually, a James Beard semifinalist nod in 2024.

Mcintosh returned to Momofuku to complete his professional development as their General Manager. When he is not working with his partner at Milkfish Bakeshop, he and his wife are kicking it tough with their two kids and three cats.
