Chef Yuri Szarzewski began his professional career at age 17 as an apprentice at The Ambassade restaurant in Beziers, in the south of France, then the region’s only one-Michelin-star establishment. He attended restaurant school for four years, earning his BEP and BP diplomas, sharing his time between three weeks in the restaurant and one week at school, and won both the local apprentice competition in Beziers and an international competition in Stockport, England.
He went on to spend two years at the two-Michelin-starred L’Oustau de Baumanière in Les Baux-de-Provence before continuing his training in Paris, gaining experience in some of the city’s most prestigious palace hotels, including Le Bristol (three Michelin stars), the Four Seasons Hotel George V (three Michelin stars), and the Shangri-La. Only after this foundation did he step into a sous-chef role at Restaurant Jean, listed as one Michelin star in the Michelin Guide. Szarzewski later became his own chef/owner and made the big move to the United States.
Szarzewski is proud to be part of the Maîtres Cuisiniers de France. Its mission is to preserve and transmit French culinary tradition in the United States, and that responsibility matters deeply to Szarzewski. The name Partage reflects that philosophy. It is about sharing with guests and sharing with the Partage team. Passing on technique, discipline, and passion for this craft is just as important as what ends up on the plate.
Szarzewski’s journey began at home, inspired by his mother’s cooking and the chefs he watched on television. That curiosity grew into a love for competition. Beyond the kitchen, martial arts taught him discipline and resilience. After years of training with a professional team and competing on a major stage inside a Las Vegas casino under a well-known MMA organization, TUFF N UFF, fighting in front of more than 1,000 people, and winning. Those same values guide Szarzewski today as a chef and mentor.
